Mom's Old Fashioned Cucumber Pickle Recipe

 
 
Do you like Pickled Refrigerator Cucumbers?
 
Every since I can remember these were mainstays in our summers refrigerator.
My Dad always had a big garden, so our summer table was blessed with plenty of fresh vegetables to feast on. Once the Cukes were on we knew Mom would be making her refrigerator pickles for us all to enjoy.
 
As you can see this recipe has been much used in my home as well over the years.
 In order to preserve it in my Mom's original handwriting I covered it with clear plastic a couple of years ago.
It's hard to read with the camera's glare on it so I've typed it out for you here:
 
Cledia's Old Fashioned Cucumber Onion Pickle
 
1/2 cup vinegar
1/3 cup sugar
1/4 cup water
2 Tbsp. salad oil
1/2 tsp. salt
1/8 tsp. pepper
2 small sized cucumber,
thinly sliced
1 onion, sliced
 
Combine and mix the first 6 ingredients in a sauce pan. Heat, stirring just until the sugar is dissolved.
Remove from the heat. Arrange cucumbers and onions in a covered refrigerator dish. Pour vinegar mix over the cucumber and onions, cover and refrigerate 4-6 hours before serving.

  2. Good morning! My mom made these too! I LOVED them. She didn't have a recipe written down but I have a feeling it was very similar to this one. LOVE that you have your mom's original recipe in her handwriting. I have a few of those too. Good idea on how to preserve them. Enjoy your day!

  3. Oh, yes, I remember the days when...if I had loads of cucumbers, this is just what I'd do. Another thing my mother did was much simpler and sat on the counter...we were allowed to enjoy them without asking permission, which I loved...cucumbers sliced and just covered with apple cider vinegar. She'd peel up several cucumbers every morning and they would be our snack throughout the day.
